Smashed White Bean & Salted Pork Sandwiches
Beans are a common presence in your food stockpile. There has to be a way to make something with the food without having to do any cooking; let’s see how.
NB: This recipe will conveniently feed four people.
Ingredients:
- A pack of White Beans
- Olive Oil
- 1 Avocado
- Whole Grain Bread (8 slices)
- Salted Pork (Ham, Prosciutto, Virginia Ham — 8 slices)
Steps:
- Start by de-moisturizing your beans using a colander before mashing up in a bowl. Put in some olive oil, pepper, and salt to taste. If there’s minced rosemary (or any tasty fresh herb) available, you can add to the mix to make a dip.
- Cut your avocado in half before doing so in quarters. Do not peel off the skin.
- Place the slices of bread on a clean surface to arrange the sandwiches.
- Spread your smashed bean mix on the slices of bread, now skin your avocados & use 1 quarter for each bread. Use the other slice to cover the sandwich. You’ll have four sandwiches made.
- Put in some slices or chunks of pork to the mix for some extra taste, then conclude the meal by adding some fresh sprouts or lettuce or just eat that way.
Tasty Crab Salad
Canned or packaged crab is a protein source that is likely to be available even during a crisis. It needs to be refrigerated, no doubt, but most enjoyed in the summer & spring. Let’s see what you need to make this delicious chipotle salad.
Ingredients:
- 1 container of Crab Meat
- Some strands of Asparagus
- Chipotle Mayo
- 6 Green Onions
- Cilantro (at least 1 bunch)
Instructions:
- Drain the crab using a colander & leave in the sink.
- Dice the Asparagus into pieces of 1” each and put in a bowl.
- Slice your onions & cilantro thinly and pour in the bowl as well.
- Put in the crab meat.
- Squirt Chipotle mayo generously so everything is coated & tossed gently to avoid breaking up the crab.
- Keep in the fridge & serve chilled.
